Oven-baked chicken with vegetables is a hearty, delicious and beautiful dish that you can easily prepare for a homemade lunch or dinner.
Chicken (drumstick, thigh) – 700-800 g
Zucchini – 1-2 pcs. (450 g)
Potatoes – 800-1000 g
Carrots – 1-2 pcs. (250 g)
Onions – 1 pc.
Sweet peppers – 2 pcs.
Mayonnaise – 3 tbsp l.
Salt, pepper – to taste
Paprika, turmeric – to taste
Wash and dry chicken legs or thighs. Add salt, black pepper, paprika and rub well with spices. Leave the chicken to marinate for 20-30 minutes.
In the meantime, let’s get busy with vegetables. Cut the potatoes into cubes. Carrots – in circles. Zucchini, peel and cut into slices. I have a young zucchini and I did not peel it. Peel sweet bell peppers and cut into strips. Onions – in half rings.
We transfer the vegetables to a deep bowl or directly into a baking dish (grease the baking dish with vegetable oil). Add salt, black pepper, turmeric and mayonnaise. Mix well.
Put the chicken on top of the vegetables, cover with foil and send it to an oven preheated to 180 degrees for 80 minutes. Remove the foil 10-15 minutes before it is ready to brown the dish.
